With more than 10 years' experience in the Macao market, Chef Michele brings his intimate knowledge of Macao's fine dining scene and expertise gained over 20 years in Europe and Asia to The Manor.
Originally, from Bari on Italy's southern Adriatic Coast, Chef Michele has gained experience and knowledge in kitchens all over Italy, Germany, Spain and Switzerland, including the two Michelin-star La Broche, before relocating to Asia in 2004.
True to his Italian origins, Chef Michele is a passionate believer in cooking techniques that make the freshest and finest ingredients the ‘star' of the dish, optimizing slow cooking techniques and using uncomplicated flavoring, which he then elevates into the contemporary through innovative presentation, in the tradition of The Manor.
Bringing over 15 years of international culinary excellence across Italy, the United States, Australia, and Hong Kong, Chef Francesco brings a master artisan's touch to The Manor Grill at The St. Regis Macao. Grounded in deep Italian heritage and refined butchery techniques, his cuisine is a celebration of exceptional provenance, bold Mediterranean flavors, and conscious gastronomy.
A graduate of the prestigious Accademia della Macelleria Italiana and a holder of the elite Maestro della Carne diploma, Chef Francesco honed his craft under the mentorship of legendary Tuscan butcher Dario Cecchini. Inspired by Cecchini's philosophy of authenticity and joyful hospitality, Chef Francesco champions a refined nose-to-tail concept—approaching every ingredient with technical precision, creative reverence, and an unwavering commitment to sustainability.
Having contributed to premium meat programs and culinary concepts at leading global establishments, Chef Francesco seamlessly blends time-honored artisinal methods with contemporary fine dining.
